Recipe for Our Delicious Walnut Banana Muffins!

These muffins are extremely easy to make and are very nutritious!

Why did we choose this recipe?

We chose to make banana muffins because they are very fast and easy to make. They don’t require any special kitchen tools and they don’t take many ingredients either. Also, they’re very beginner-friendly because to make them, they don’t require any difficult baking techniques and most ingredients that required are already owned by many people in their house. In addition, we really like the taste of banana muffins. They also have an ingredient from each recommended group from Canada’s food guide. The bananas are fruits, the flour and oats are grains, and the walnuts are plant-based protein.

Ingredients:

1 egg:                                                                                                       ¼ cup of melted butter:

  • High-quality protein                                                                 – helps create airy texture
  •  Rich source of selenium, which is good for the eyes 
  • Rich source of vitamin D

2 large ripe bananas:                                                                               ¼ cup of sugar:

  • good source of potassium, vitamins and minerals           – helps with the flavour
  •  Improves digestive health 
  • Contains antioxidants 
  • Good for the kidney and heart 

Approx. ¼ cup of Walnuts:                                                         2/3  teaspoons baking powder:

  • Rich in antioxidants                                                                 – Used to help muffins rise
  • Super plant source of omega 3  
  • Good for brain function

⅛ cup of honey:                                                                                 2/3 teaspoon baking soda:

  • High antioxidants                                                             – Used to neutralize acids
  • Healthier than refined sugar                                              and add some tenderness
  • Helps heart health to the muffins

Approx. ¼ cup of oats                                                                            1⁄3 teaspoon salt:

  • Good carbs and fiber                                                                 – Used to enhance the
  • Lower cholesterol                                                                  flavor of other ingredients
  • Packed with vitamins 

1 cup of flour:

  • Flour provides the structure in baked goods

Tools needed:

Medium sized bowl

Measuring cups/spoons

Cupcake tray

A tool to mash bananas (fork or potato masher)

A tool to mix batter (a spatula, whisk, etc.)

Cupcake liners (If none use vegetable oil to grease tray)

Directions:

Step 1: Prepare all the ingredients and preheat your oven to 375F

Step 2: Mash the both bananas

Step 3: Add sugar, honey, melted butter and egg

Step 4: Add all the dry ingredients

Step 5: Add walnuts and oats

Step 6: Give it a whisk and put it in the oven for 20 minutes

Our feedback!

We would likely eat this snack in the future because its easy to make with most ingredients available at home already. This snack is also relatively healthy, mess free and not too heavy, in fact it is light and fluffy. In actual fact, later that night, at 10:00 pm, Veronica decided to make another batch which shows that these muffins are absolutely delicious and mouthwatering.
